About:Shanghai Transportation

I will fly with Air NZ from Auckland to Shanghai Pudong Airport arrival at T2.

Here I have to transfer to a KLM flight to Amsterdam at T1.
- transfertime is 5h35m. Is that enough?
- Do I have to clear customs and pick up my luggage at T2 and than check-in again in T1 for my KLM-flight?
- Is that very complicated? (I'm a very unexperienced traveler ;-) )

Yes, 5h35m is enough for you to transfer and you need to clear customs and pick up your luggage at T2 and then check-in again at T1.
It's not complicated and just follow the guide:
After Arrival – Confirm Onward Boarding Pass On Transfer Counter - Check in, Customs(Health Quarantine), Immigration and Security Check – International & Hong Kong-Macao-Taiwan Waiting Hall – Boarding
