When we are in China how do we pay for things? Can I use my Visa or Master Card？

Some big shopping malls or restaurants would accept Visa or Master credit card, but most local shops and restaurants accept cash only. It is convenient to carry around some cash. You are suggest exchange some cash in your country, or you can take dollars to China and exchange in Bank of China.
