About:144-Hour Visa-Free Transit

I hold a Belgian passport. My flight plan is:

Brussels > Shanghai (6 nights) > Hong Kong (not leave airport) > Brussels

Is it allowed to use Hong Kong as 3rd country even when not leaving the airport? If not, how long should I stay at the 3rd country before flying back home?

That's fine. There's no requirement to leave the airport once you have left Mainland China.
