We are going US-Beijing (less than 72hours)-Seoul
Do I have to do anything before leaving the US?
How much do I have to pay at the airport in China for the 72-hour free transit?

You are able to use 144h twov, and it's free of charge. There is no need to do anything before leaving the US.
