About:China Visa Application Procedure and Fee

We are traveling to Brisbane to the Chinese Visa Application Service Centre (CVASC)

and would like to know if we can wait for the visa or do we have to supply a self addressed envelope to have our visa and passport sent back to us.

No, even the fastest service takes two working days, so you can't wait for it. However, you can apply by post. I'm sure whether you drop off the application in person and then ask the staff to post your application back.
