About:Guangzhou - Shenzhen - Hong Kong High Speed Train

Highspeed train

Would there be an issue if we fly in guangzhou and take the highspeed train to shenzhen and then cross to hk to fly out?

This route is surely possible. The easiest way should be a flight to HK directly but the ticket price could be expensive and usually only 2 flights a day, one in the moring and one for late night. If the time cannot fit your flight from HK, your route would be good option.
