About:144-hour Visa-free Transit in Beijing, Tianjin & Hebei

I am an American and we want to fly from Korea to China and then onto Japan.

Do we qualify for the 144 hour or the 72 hour visa? Also, do they cost anything or how do we know which one we want.

It's not a visa. You are allowed to transit without a visa if your itinerary and passport qualify. Whether it's for 72 or 144 hours depends on the city that you transit in; you don't get a choice.
