flying from detroit to shanghai to guangzhou

What is the procedure once I arrive in SH? Baggage claim? Immigration? etc.

If you travel Eastern Airlines for the whole journey, there is no need to reclaim the baggage. Immigration, customs and security check are ok. But the baggage is needed to be reclaimed and rechecked in if traveling with other airlines.
