We would like to take the high-speed train to the Shanghai Airport, as an experience for the kids. Any recommendations here?

Do you mean the Maglev train in Shanghai to reach Pudong Airport? This Maglev train is available from Longyang Road to Pudong airport. You can take a taxi to reach Longyang Road station first and then experience the train to the airport.
