About:72-Hour Visa-Free Transit

New Zealand passport-I am flying into Shanghai, Tuesday

and Friday flying to Hong kong, Macau and Sanya. Then back into China-Guangzhou then onto Shanghai. Can I get a transit visa for the first part and then get a one time entry visa to China when we get into Guangzhou?

You don't need a transit visa for the first part (assuming you're not arriving in Shanghai from Hong Kong or China). You'll re-enter China at Sanya (not Guangzhou) and you'll need a visa.
