AMS-Shanghai-HK-AMS or equivalent

I am a German passport holder. Is it possible to fly from Amsterdam via Shanghai (3 Days visit) and return via Hong Kong ( approx. 2 1/2 hours between flights) to Amsterdam. Am I qualified for the 144 hours visa in Shanghai? As situation is now I fly with 3 different Airlines (KLM/CaPacific/Air France).
