72 hour free transit for this

I am living in South Korea (American) and was thinking of flying to Beijing and then flying to Hong Kong for a visit before returning to South Korea. Is HK considered China or is it considered a third country?

It's a third country for this purpose. Your itinerary is fine for 72 hours transit without visa.
