About:72-Hour Visa-Free Transit

Standby to shanghai

I am entering shanghai on a standby ticket from amsterdam an leave the country 68 hours later back to amsterdam on a standby ticket. Can i use the 72-hour visa in this case?

That's not going to happen. As soon as the immigration recognizes that you are on a standby ticket, you'll be forced to purchase a full-fare ticket or on the next plane home.
Oh, and also you are not in transit.
