Can I (canadian) fly to Hong Kong, spend 4 days and on to Shanghai, spend 3 days to six days

then return to Mexico using the 72 or 144 hour visa free rule in China?

That's fine as long as your flight to Mexico does not stop in Hong Kong or another Chinese city.
