About:Shanghai East Nanjing Road

flying Montreal - Shanghai - Kaohsiung, then 7 weeks later Kaohsiung - Shanghai - Montreal

For the above trip, will I be able to spend 144 hours in Shanghai, Jiangsu and Zhejian on the way in AND on the way out? So, a total of 288 hours?

Yes, you can do that. You are eligible for the 144 hour visa-free transit in Shanghai in both directions.
