About:144-Hour Visa-Free Transit

I'm finding this "transiting" term to be the most confusing part of this TWOV.

I am a US Citizen living in Japan. I will travel:

Tokyo - Seoul - Shanghai - Taipei - Macau - Hong Kong - Hanoi - Bangkok - Manila - Tokyo.

I have confirmed one way flights for each trip. Each trip is for 1 night. I also have confirmed hotels in each country. So my understanding is the TWOV doesn't care about all these countries, only that there is 1 country before and after China (Seoul - Shanghai - Taipei) - correct?

I don't feel like I am "transiting" - that makes it sound like a layover. I'm just making 1 night trips to each country in a successive chain. Is it fine?

Yes, it's correct.
You can use the 144 hour free transit in Shanghai, no transit G type will be needed for that.

But if my stay in Shanghai is under 24 hours, do I request a 24 TWOV or what exactly do I request?

Of course, you can request the 24hour TWOV if you stop there for not exceeding 24 hours.
