You can take the Airport Express to Hong Kong and then take Island Line to Wan Chai0

there is only ONE change you get off the airport train at Hong Kong station then walk a short distance underground (follow the crowd) to Central station and then it is 3 stops on the island line.
However if your hotel is in the Wan Chai area (like The Novotel) there is a FREE shuttle to those hotels from Hong Kong station0

The fare to travel by train (usually called MTR, Mass Transit Railway, in Hong Kong) from airport to Wanchai Station is HKD100 one way, you need to change lines twice at Hong Kong Station and Central Station. As an alternative you can take bus routes no. A11 or E11, both can take you to Wanchai area without changing to other lines/buses, the bus fares are HKD40 and HKD21 respectively. There are bus stops close to Wanchai MTR Station.0
