About:72-Hour Visa-Free Transit

Hello, I received a 72 hour transit visa in Guangzhou

after showing my flight to Hong Kong that would be leaving two days later. My business appointment in Hong Kong was moved a day earlier, however, and I need to cancel my flight - and there aren't any apparent flights that are earlier. Would it be possible to take the train out of Guangzhou instead?

You don't have a transit visa. You are in free transit. This makes a difference because you will face a check by Chinese border police before boarding the train, and you don't have a valid visa. Then you risk a long interrogation, not boarding the train and getting black-listed for future visits to China. But it's up to you, of course.
