About:72-Hour Visa-Free Transit

...-Vietnam-Seoul-Beijing-Japan-Shanghai-HongKong-(via Dubai)-Germany

I am planning to do a round trip in Asia.
There is two questions that make me worry:
1. Entering China multiple times (Beijing, Shanghai and HongKong) - could that be difficult or does it work with Transit Visa?
2. The last part of the trip: Shanghai-HongKong-(via Dubai)-Germany - is the via Dubai (with the same airline that brings us to Germany, so with one ticket) enough to count for a transit visa? I heard it is, but cannot find anything in writing that this is ok. Usually the trip home counts as a direct connection to the home country and thus the trip would not be valid for a transit visa. But stop-overs are seen as a thing?

1) That's fine.
2) As long as your routing is compliant, there are no restrictions with the airline ypu can use.
