Liz, I think double entries are enough for that.

Hi Liz.. I think you should check & confirm the last advice that you would need a double entry visa for your visit to China. The stop in Xiamen would be covered under the 72 hour transit exemption visa policy if you are coming from outside China and so would your visit to Shanghai because you are entering from Hong Kong. Hong Kong is a special zone & not classed as "real" China. The 72 hour free transit is calculated from the midnight following your arrival, I think your dates are ok for that.
I have been to Guangzhou then Hong Kong and onto Chengdu then Europe without a "real" visa, re-entering China from HK and then on to a different destination was enough to qualify.
I know a single entry visa is $110 each, not sure the cost of a double entry but it's a waste of money if it's not necessary.
To clarify, a 72 hour transit exemption visa is available for direct entry to one of the designated cities from a foreign city, or Hong Kong then departure to a different foreign city... not Hong Kong.
Looky here :-)

I'm sorry Neil, like your spelling of Liz's name, you are wrong. Also I can see no mention of India in her letter. I suggest you read the link I posted. I have actually done this trip & no visa is required.

Liz, Based on the dates and destinations in your letter I am positive that my advice is correct but why don't you confirm it with your travel agent or the shipping company. Or get double entry before you go, I think not necessary but you will have no worries.
