About:72-Hour Visa-Free Transit

Transfer with two different airlines

"Passengers using other vehicles (including using flight for single trip) are not eligible to enjoy the policy."

I am confused about the quoted sentence. My plan is to fly in with Finnair from Helsinki to Beijing. Spend there three days and then go with Jeju Air to Korea. (Return trip would be from Seoul directly to finnland). Would that be a problem? Thanks for your advice.

It's not a problem. That sentence just means you can't travel by train, bus, car, camel, etc if you want visa-free transit.
