About:Beijing Capital Airport T2

I will be flying into Capital Airport at 8PM from the U.S. and transferring on to South Korea.

I have just slightly over 2 hours to make my flight to S. Korea. Is that enough time and will I have to go through Customs and Immigration since China is not my final stop?

Yes, your time is enough. Don't worry. Yes, you need to go through customs. The procedures are the following:
Flight Arrival - Transfer Procedures - Stamped on the Boarding Pass - Security Check - Custom Inspection - Waiting & Boarding

Thank you, Peyton! I did fail to mention that I must switch between Terminals 2 and 3. Given that, is two hours still enough time?

Well, if so, the time is tight. You need to finish the transfer procedures as soon as possible. Generally speaking, the minimum transfer time is 2 hours.
