and locations where we will be staying as we intend to book as wee go. What type of visa do we need and is this ok or must we have definite plans?

Debra, I guess you are going to China for tourism purpose, right? If yes, you should apply for an L type. To get this L type, hotel bookings and round-trip tickets are neccassry to provide, but you don't have to book all hotel for your trip. About 2/3 will be fine.
