Can we come from Australia to Hong Kong with a connecting flight to Beijing

and then return to Hong Kong for a 24 hour stopover then onto Vancouver on the 72 hours free visa

Sylvia, if you fly like Australia –HK-Beijing (72 hours)-HK-Vancouver, you cannot enjoy the 72 hour free transit in Beijing.
