About:Guangzhou Baiyun International Airport

What route do I need to collect my cases and check them in again at Baiyun Airport?

I'm flying from Heathrow then to Sydney.
As I'm only doing a 3hour stop over at the airport.

No, you don't need to reclaim the luggage because you are an International to International transfer. And no visa is needed. Don't worry.
BTW, the procedures are the following:
Flight Arrival - Inspection & Quarantine - Transfer Procedure - Waiting & Boarding
