About:144-Hour Visa-Free Transit

Does this procedure is applicable to return flight (France=>Shanghai=>France)

because I have doubts by reading "confirmed seat and date as well as a valid visa to a third country or region (if required)"

No, it doesn't. You have to fly from Shanghai to a different country.
