I have Canadian permanent resident and Nepali citizen.

I am traveling to Nepal via Hongkong. Can I exit Hongkong for sightseeing during my transit for 8 hrs?

You need to apply for a transit entry permit for HK ahead of your trip. In this case, when you arrive, you can exit HK for sightseeing.
