About:Dual Nationality

I am an American citizen living temporarily in China, and I married a Chinese woman.

We plan on eventually, once the immigration process is over, moving back to the United States.
Does my wife have to do anything (related to the Chinese authorities) to legally exit China for America?

Just take her passport and US visa and she can legally exit PRC.
If you plan to live in America for a long time, she may consider applying for the permanent resident card.
