About:China Visa Entries / Validity / Duration of Stay

I have M Visa but in one entry can not stay more than 30 days, can I go to Hongkong and enter agaian

If your M type has double entries, you can exit to HK after 30 days run out, and then re-enter to get another 30 days.

Is there a certain amount of time that has to be spent outside PRC before re-entry is allowed? I'm thinking of staying out just two days before re-entry

No, there is no such kind of time requirement. You can exit and re-enter after two days.
