About:72-Hour Visa-Free Transit

I do have an Italian passport and will be flying from Germany to Shenzen via Beijing

and returning from Shenzen within 72 hrs from my Beijing entry date back to Germany via Beijing. Arrival flight schedule: Duesseldorf- Beijing-Shenzen. Back flight schedule : Shenzen -Beijing-Duesseldorf. Can the 72hrs visa rule be applied?

No it doesn´t work.
First you can´t have two stops in China under the 72h twov rule.
And second, there´s no twov in Shenzhen yet.

For this trip you have to apply for an entry permit in advance.
