And fly out of Pudong International Airport T1 17:40.  Is that plenty of time if I take the airport bus?

Yes, you will have enough time to take the direct shuttle bus from T2 to Pudong Airport. The service hours are from 06:00 to 23:00 every 20~30 minutes. The duration is about an hour in usual time. So don't worry.
