Sanny, considering your situation, you can apply for an F type or M type for the internship. You can use the F or M type to travel around the whole China, so you are able to go to Shanghai or Beijing with it.
But the F type or M type cannot be used to enter HK. However, don’t worry because you hold UK passport, you are allowed to enjoy free entry to HK for a stay of not exceeding 180 days.
Once you exit mainland PRC to HK and when you want to re-enter, it will be another entry, so you are advised to apply for a double-entry or multiple-entry F/M type.
