Hi Arthur, were you a Chinese before? If so, I think the travel agency is asking for your previous HK or China passport or something you can prove you used to be a Chinese passport holder. This document is usually required by the embassy for PRC immigrants.

If you have never had Chinese citizenship, your visa application is same as other foreigners and it is simple. If you had Chinese Citizenship before your Canadian citizenship, you must present your previous Chinese passport or Chinese Identities. If you never been to mainland china while you are in Hong Kong prior to 1997, then you are only Hong Kong Resident without Chinese Citizenship.

Be aware you will consider as Chinese citizenship if you applied Hong Kong SAR passport. HK SAR passport only issued to Hong Kong permanent resident with Chinese citizenship.
