About:72-Hour Visa-Free Transit

I am British passport holders. I want to travel to Shanghai for 72 hours from Bangkok and fly back

So my itinerary : Bangkok - Shanghai - Bangkok
stay 721 hours.
Can I do that ?

Sorry, you can't do that. The rule stipulates that the next destination after the transit should be different from the country of departure. You can fly from Shanghai to Bangkok via another foreign city to make yourself eligible.
