Airport to Big Buddha then Big Buddha to Wan Chai

Hi, we have 2 nights in Hong Kong, but arrive at 6.30am on the first day, so figured a visit to the Big Buddha would be a good way to fill in time before check-in at our hotel on Hennessy Rd, Wan Chai. I've read the previous comments on how to get to the Big Buddha from the airport (and store luggage near the cable car station), but how do I then get to our hotel from the Big Buddha?
What kind of tickets/card/rail pass would I need to purchase from the airport (I'm not sure whether to get the Airport Express, Octopus card or pay for single trips)? I heard the Airport Express return gives 3 days free travel on the MTR? Does it include buses or ferries? Is there a card that does it all??

After visiting the Buddha, take the cable car down to Tung Chung. Collect your luggage and take Tung Chung Line to HK Station. Walk to Central through the underpass and take Island Line to Wan Chai. Find your hotel and check in.

For three days' stay, the Airport Express Travel Pass can be a good choice if you wanna use MTR a lot as well as the Airport Express. You can use it on buses and ferries, but have to top it up more. To cover all public transportation, a Standard Octiopus Card is suggested. After arriving at HKIA, you can find a round counter in the waiting hall. There you can get either of the cards.

Can you get off the Airport Express bus, go to the Big Buddha and catch it again later?

Thanks Luna! Can you split the journey on the Airport Express bus (ie. get off at Tsing Yi, change to Tung Chung, go to the Big Buddha and catch it from Tsing Yi to HK again later?

Yes, you can split the journey. However, it is not need at all for the trouble of transfer. Upon landing, take bus no.S1 at Passenger Terminal Building, Cheong Tat Road, get off at Tung Chung directly. It takes around 25 mins with the fare of 3.5 HKD per person. Then walk to the lower cable car station and take it to the Giant Buddha.

After touring around, you can go back to Tung Chung Station first. Then take Tung Chung Line to arrive at HK Station directly. The duration is about 30 mins. It costs 21.9 HKD per person.
