About:Beijing Capital International Airport

Arrive at PEK from DPRK, 2.5 hours to Hong Kong flights.

Arriving from Pyongyang via Air Koryo on a saturday in late October (NOT golden week), scheduled to arrive at 09:55am. A flight from Beijing to Hong Kong to begin my return home to Australia is scheduled for 12:30pm the same day, giving me a two and half hour layover. I don't know the terminals of the flights yet, but is Hong Kong considered domestic and therefore in another terminal? Do I need to clear customs and border control when arriving from DPRK if I don't leave the airport, before checking in to my next flight to HK? Thank You.

First of all, the flight to HK is regarded as the international one.
Your next flight to HK is operated by Cathay Pacific Airways, right?
It's international to international transfer from T2 to T3. Generally speaking, you need about 2 hours to make this connection. So you are suggested to complete those procedures as soon as possible.
The correct transfer procedures are Transfer Procedures - Stamped on Boarding Pass - Security Check - Custom Inspection - Flight Waiting and Boarding.
