On Sunday, is the first train to the Airport also at 6:45am? What time do I need to depart from Yuyuan Garden Metro Station to buy the ticket and take this first train? Thks.

Yes, you are right. The earliest schedule to PVG is at 06:45 on Sunday. But generally speaking, you need to arrive at the airport 2 hours in advance. So if you wanna take the public transportation, the time is so tight. From Yuyuan Garden Station, it's suggested to take a taxi to Longyang Road directly in order to save time then change to the maglev to the airport. It takes 5 to 10 minutes. By the way, the Maglev Train takes around 8 mins on the way.
