I will be traveling from Melbourne to Ulaanbaatar via Hong Kong by Mongolian Airlines. Which one is for transfer point of Mongolian Airlines? E1, E2 and W1?

So you will just have a stopover in HK flying from Melcourne to Ulaanbaatar, right? If so, you should hold the through ticket. Just follow the signs to find the boarding gate printed on your boarding pass, no need to go to transfer desk area. The go through security check and check in.
