Well, here is the info I know and hope these can help you:
Day 1&2: I suggest you stay in Haizhu District, especially Haizhu Square, which can be convenient for shopping, dining, transportation and sightseeing. It is also within walking distance to Beijing Road. The GZ Hotel and Bauhinia Hotel are suggested. Both of them are within walking distance to Haizhu Square. To reach there from Baiyun Airport, it is best to take shuttle bus line 5 to arrive exactly.

For fashion clothes, go and find at the clothing wholesale market near GZ Railway Station; for good baby clothes, the children's clothes market on Zhongshan 8th is the best choice. To either of them, you can easily reach by subway. As you are traveling with baby, it is also fine to take a taxi instead and the distance is not that far.

Day 3: If staying near Haizhu Square, take a taxi to Yuexiunan Bus Station in 5-7min. There you can take a direct bus to Zhuhai Gongbei. Pass the borer and you will be at the Barrier Gate of Macau. Nearby you can find the free shuttle bus of Venetian. Take it to your hotel~

To Continue:
Day 4:
Transport for sightseeing: Walk from Venetian to the opposite - City of Dreams. Get on their free bus to Hotel Sintra. Then walk to the Ruins and Senado Square for a visit. You can also walk to the Avenida de Almeida Ribeiro for shopping. For local snacks, the Rua da Cunha can be the best choice. You can take the free bus of City of Dreams to Galaxy, then walk there.

To Ferry Terminal for ferries to HK: Venetian has direct free shuttle buses to Maritime Ferry Terminal, where you can easily catch a ferry to HK. You are suggested to have a ticket to China Ferry Terminal, Kowloon, from which you can walk to TST in 8min. And the Kowloon Hotel can be considered.

Day 5: The above hotel is close to TST Station. There you can take Tsuen Wan line to Laiking, where transfer to Tung Chung Line. Get off at Sunny Bay and transfer to Disney Resort line to the park. And the return way is the same.

Day 6: If you have luggage, it is best to take a taxi and it costs CNY240-250 to HKIA. Or you may take bus no. A21 to the airport in around 65min. It is free for your baby and costs you 33HKD.

Yes, there are goods for retailing at Haizhu Square, no worry. Actually, one day is enough to shop at both Beijing Road and shangxiajiu Road. But it will takes a lots of energy and take care of your baby while shopping.

1). Yes, you just take shuttle bus line 5 to the terminus: Haizhu Square, and you can find the hotel to your opposite. The trip takes about 1 hour. 2). Yes, you may take a free shuttle bus from Border Gate to Galaxy Hotel. 3). You may take a free shuttle bus to Macau Outer Harbour Ferry Terminal. Then, take a ferry to China Ferry Terminal. Which hotel do you refer to by "Metropark Hotel"? Metropark Hotel Causeway Bay? Metropark Hotel Kowloon? or Metropark Hotel Wan Chai?

Okay, I have found it.
1. From China Ferry Terminal to the hotel: walk east for about 700 yards to Tsim Sha Tsui Station. Then, take MTR Tsuen Wan line to Prince Edward Station, Exit C2, and you can see the hotel.
2. From hotel to Disneyland: take MTR Tsuen Wan line from Prince Edward Station to Lai King Station. Next, change to Tung Chung Line to Sunny Bay Station. Then, change to Disneyland Resort line to the terminus.
3. From hotel to Ladies Market: Walk south along Nathan Road for about 700 yards to the market. It is an ideal place for shopping near the hotel.
4. From Hotel to Avenue of Stars: Take MTR Tsuen Wan line from Prince Edward Station to Tsim Sha Tsui Station, Exit F. Walk south to the avenue.

Hi there, I did not find baby friendly place around your hotel in HK. Sorry for that. But if time permits, you can also go to Ocean Park. It's will be a lot of fun for kids. From your hotel, you can take bus 171 from Nullah Road Mong Kok to get there. Duration is about 35 minutes and ticket fare is HKD 11 per person.

It will be ok for you to take bus from hotel to HKIA. Lots of people travel in that way and there are space for your luggage, no worry. From hotel, you can walk to Bute Street, Nathan Road to take bus E21 to reach the airport directly. Duration is about 70 minutes and ticket fare is HKD15.
