Hello Ferdie. Here is a simple plan for your trip just for your reference:
Oct. 29: Temple Street Night Market
Oct. 30: Go to the peak in the early morning. Near Central MTR station, you can take the tram onto the top. After that, take tram down to Central. Walk to HK Station to take Tung Chung line to Sunny Bayu and transfer to Disney Line to the resort for entertainment. Afterwards, still use the same way back to HK Station. Use Island line to Sheung Wan and walk to HK-Macau Ferry Terminal to take a ferry to Macao. (ferries are in 24h service there)
Oct. 31: Visit Macao Tower, Senado Square, Ruins of St. Pauls, Grand Prix Museum and Wine Museum, and Venetian. Then take the free shuttle bus to Macao Maritime Ferry Terminal. Take a ferry to HKIA to catch your flight.
