how long will I need to spend to see Hong Kong & Macau ?Secondly, what are the MUST destinations ?

Well, generally speaking, people usually spend 3-4 days in HK and the must sees include Victorial Harbor, Star Avenue, Ocean Park, Disneyland, Big Buhhda and Mong Kok.
For Macao, 1-2 days are enough, where top attractions include Ruins of St. Paul's, Senado Square, St. Domingo's Church, Fisherman's Wharf and Venetian Resort Hotel.
