I need to go to xiamen but I have ticket only till hongkong. But I want to use bullet train to shenzhen to xiamen Which way is better to reach shenzhen north station

From HK, you can take the MTR East Rail Line to Lok Ma Chau Station. Then pass the Futian Border, you will reach SZ. Then take the subway Longhua Line to the North Railway Station directly.
