If you plan to travel on 240 hour visa free transit you can take a high speed train from Hong Kong West Kowloon station to Shenzhen. You can use Futian station in Shenzhen as your destination (more centrally located compared to Shenzhen North). Also, you will depart from Shenzhen toward Macau after your, up to 10 days long, stay in Shenzhen or generally in mainland China.
You can buy your Shekou to Macau ferry a month in advance through boat operator website TurboJet ferries. If you prefer to buy through Klook it is quite possible that you will be able to book the tickets at the very end of January or starting from the first day of February. Please, have in mind that you will really have to buy that ticket because you will be asked to present it at both Hong Kong and mainland China immigration authorities at Hong Kong West Kowloon station. You are advised to arrive at West Kowloon station roughly 2 hours ahead of your train departure because you will clear both Hong Kong and mainland China formalities right at West Kowloon station.
It is hard for me to predict the amount of passengers on day 1 of Chinese New Year since it falls on February 17 (Tuesday), but the holidays will start on February 15 (Sunday), so it is quite probable that the majority will depart on Friday or Saturday, just before the beginning of the holiday. Please, have in mind that my explanation is valid for mainland China only since Hong Kong has some different calculations of available holidays for Chinese New Year. Hope this helps.
