is there any way I could get a longer term visa than a tourist type?

Say I wanted to make a non professional type documentary

You may apply for a M type instead. You need to find a partner in China and then get the invitation letter from your partner. Perhaps, the invitation letter from duly-authorized Chinese unit is required too. Your partner can assist you to acquire it.
