Hi - I am travelling to Taishan to teach at a local high school.

I am a bit nervous as I am gluten inteolerance and lactose intolerant, therefore I follow a strict paleo-style diet. What are the best local dishes - soups etc that I should order. Or foods that I should stay away from that may hide these ingredients? Many thanks!

Im sorry to hear that. Most foods there are not suitable for you. Just take in food made of rice, sweet potatoes, millet porridge, etc. Don't eat the local noodles. Anyway, you'd better ask your family to send your regular food to the city or buy some online for your sake.
