2 one-way tickets for Tourist Visa?

I'm traveling to Shanghai from New York on a one-way ticket. I might be going to Mongolia before I depart back to New York from Beijing on a separate one-way ticket. Will both of these one-way tickets satisfy the roundtrip requirement? I will be staying with friends in Shanghai and they have written me a letter.
