About:Chinese Embassy in New Zealand

Australian needing tourist entry permit.

We're heading to China next month and don't plan on having return flights booked when we send off our visa application. If we have a letter of invitation does this mean we do not need the return flights booked?

Yes, your understanding is right. Generally speaking, if you can provide an invitation letter, then the round-trip tickets are not required for submission.
