I would like to travel by HSR from Hong Kong to Beijing

I would like to travel by HSR from Hong Kong to Beijing stopping overnight in some of the main cities along the way. Could I get off the train in these cities and rejoin it after a couple of days?

No, you cannot get off during the halfway and back for the trip again. Once you get off during the trip, you cannot continue it anymore. Thus if you are interested in other cities between, you need to book apart like 2 or 3 trips instead.
