I am an expat living and working in China. After my contract ends can I travel on my Z visa until the end of its validity or is there a new time limit to leave China?

Dave, after your contract ends, your company will cancel your work permit and it is required that you should cancel your residence permit too. When cancelling the residence permit at the exit and entry bureau, the immigration office will give you a one-month L type so that you can travel around.
