About:

can you get rover train tickets?

we want to see some of the towns the train my stop in from Hong Kong to Shanghai and maybe stop over a night in a place. Will it be possible to buy a ticket where we can get on and off over a few days along the way?

No, you can not do that. China train tickets will turn invalid once you leave the station. If you want to make stops along the way, you can buy the tickets seperately, for instance: if you want to make a stop in Guangzhou, you can buy two tickets of HK-GZ and GZ-Shanghai. BTW, there are othere choices for you to continue the trip. You can search the real time schedule on this website on your own.
